Homemade Choco Prince
For 14-15 little princes:
The biscuit
- 200g of flour
- 1/2 tsp baking powder
- 80g of butter
- 80g caster sugar
- 50g of water
The ganache
- 60g of white chocolate
- 140g of milk chocolate
- 80g of liquid cream
Making the chocolate prince biscuit:
Pour the butter, sugar, and water into a saucepan and bring to a boil. Let it cool in a bowl . Mix the flour and yeast together. Pour in the cooled, melted butter mixture and knead until you get a smooth dough. Shape it into a ball, cover it with cling film, and set aside for 2 hours in the refrigerator. After 2 hours, roll out the dough to 3mm thick, cut out with a cookie cutter, and place the biscuits on a baking sheet.
Bake for 13-15 minutes at 180°C. They should be nicely golden.
Let them cool at room temperature on a wire rack.
The ganache
Chop the white chocolate and milk chocolate and pour them into a bowl. Heat the single cream. Pour it over the chocolate.
Mix with a spatula. If the chocolate has not completely melted, continue melting over a gentle bain-marie. Refrigerate to set.
Assembling the homemade chocolate prince cakes
1- Using a piping bag, place a generous amount of ganache on half of the biscuits and cover with the remaining biscuits.

Healthy, homemade granola cookies
- 75g of oat flakes
- 125g of flour
- 40g of brown sugar
- 1 large pinch of salt
- 1/2 sachet of yeast
- 75g of soft butter
- 40g of cold water
- 150g of milk chocolate
Prepare the homemade granola cookie dough.
- Blend the oat flakes using a food processor. Ideally, you want a fairly fine powder, similar to flour (there may be a few larger pieces left, but that's okay).

In a bowl, mix together the powders: mixed oat flakes, flour, brown sugar, salt, yeast.
- Add the soft butter cut into small pieces and mix everything together: you should obtain a roughly sandy mixture.

Finally, add the water and mix to obtain a smooth paste.

Roll out the dough to a thickness of 5 mm. Let it rest in the refrigerator for 2 hours.

After 2 hours, cut the dough into circles. Place on a baking sheet lined with parchment paper and bake at 180°C for about 15 minutes.

Once removed from the oven, let cool completely.
Prepare the milk chocolate icing.

Melt the milk chocolate.

Dip one side into the milk chocolate.

Let the chocolate crystallize for 2-3 minutes, then, using the back of a knife blade, draw 4 parallel lines, then 4 more parallel lines that will be perpendicular to the first ones.

Allow the chocolate to set completely before serving, accompanied by a glass of milk.

Kinder homemade delight
The ingredient list is long, and so is the recipe. But there's really nothing fancy about this recipe. It's one of the most requested industrial snacks among children... so don't delay, go for it. The taste at the end and the feeling of giving good things to your children is ultra-satisfying.
Ingredients
Cake dough
- 110 g of sugar
- 30 g of milk
- 30 g of oil
- 60 g of flour
- 30 g unsweetened cocoa powder
- 1 pinch of salt
- 3 g of baking powder
Soaking syrup
- 100 g of water
- 50 g of sugar
Vanilla cream
- 250 g of mascarpone
- 200 g of 30% whole cream
- 80 g of sweetened condensed milk
- 1/2 teaspoon vanilla powder or 1 tablespoon vanilla sugar
Chocolate icing
- 200 g of milk baking chocolate
- 100 g of dark baking chocolate
- 60 g grapeseed oil or neutral oil
- 50 g of milk chocolate for decoration
Preparation of the chocolate sponge cake:
Preheat the oven to 180°.
Using an electric mixer fitted with a whisk attachment or in a stand mixer, beat the egg yolks (at room temperature) with 50g of sugar for about 10 minutes. The mixture should triple in volume and become creamy.
The syrup
In a rectangular mold, place the first strip of sponge cake, soak it generously with syrup. Add cream then level the surface with a spatula. Finish with the second strip of sponge cake, soaking it with syrup as well. Place in the freezer for 2 hours.
Cut the cake into 6 pieces, each 4 cm wide. Freeze for 45 minutes.
Melt the two chocolates in a bain-marie, then add the oil. Mix and let cool to room temperature until it reaches approximately 27°C.
Remove the cakes from the freezer, place them on a cake rack and ice them with melted chocolate.
Place the cakes on a baking sheet covered with baking paper and place them in the freezer for 15 minutes.
Melt 50g of chocolate in a bain-marie, place it in a piping bag and then decorate the top of the cake with a wave pattern.
Refrigerate the cake for one hour before serving. Keep refrigerated for at least a week.

Mini Savannah-style cakes
For 9 mini cakes:
- 200g of T45 to 70 flour
- 1 heaped tsp baking powder
- 100g of SSA* compote
- 100g of vegetable milk (or animal)
- 50g of agave syrup (or coconut)
- 40g of vegetable oil (4 cases)
- 1 tsp vanilla flavoring (or 1/2 tsp vanilla extract)
- 9 squares of dark chocolate (here 9 x 7: 63gr)
- 50g of dark chocolate For coat
Preheat your oven to 180º on fan-assisted oven,
Using a smooth knife, cut our 9 chocolate squares in half lengthwise to form the 9 "bars" of our cakes. Set aside.
Mix all the ingredients.
Half fill the molds, place 2 chocolate "bars" to fill the length of the cake, add a little more batter.
Remove any air bubbles by tapping the mold on the countertop. Bake for 15 minutes.
Once cooked, let the cakes cool completely (this is the hardest part).
Melt 50g of chocolate. Dip the bottom of the mini cakes into the chocolate. Wait for the chocolate to set. Turn the mini cakes over and draw lines on the top with the remaining chocolate, using a fork.
